Minced Ginger

Cut a piece off gingerroot about the size that will accommodate the quantity needed. Peel with a knife. Take peeled piece and lay on cutting board on the flattest side so it doesn't roll. Slice thinly going with the grain, which runs the length of the root. Take peeled and sliced ginger and cut thin slices along the grain of the already sliced ginger. You will end up with little sticks. Then chop crosswise using a rocking motion with your knife until finely chopped. This is considered minced.
