Roasting Pumpkin Seeds the Healthy Way

While most stores sell pumpkin seeds, it is fun and easy to make your own. To do so, first remove the seeds from the pumpkin’s inner cavity, and wipe them off with a paper towel, if needed, to remove excess pulp that may have stuck to them. Spread them out evenly on a paper bag, and let them dry out overnight.

Ingredients:

  • 2 cup pumpkin seeds
  • Optional:

  • soy sauce
  • amino liquid
  • Preheat over to 160-170°F

    Place seeds on a cookie sheet in a single layer. Roast for 15-20 minute. Shake the pan several times when baking to prevent them from burning.

    To enhance the “roasted” flavor, try putting a little amino liquid or soy sauce into a spray bottle and misting the seeds before roasting.

    Roasting seeds at a temperature higher than 170°F will cause a breakdown of their fats and the production of free radicals.
