Simple Chicken and Summer Squash
This is a quick and easy recipe, good in the spring and summer months.
Ingredients:
- 4 medium chicken breasts, washed and patted dry
- 1 tblsp flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp olive oil
- 2 large or 4 small crook-neck squash
- 2 large zucchini
- 2 cups chicken stock
- 1 tbs herbes de provence
Directions:
Heat Oven to 400 degrees Mix flour, salt and pepper. Dredge each chicken breast lightly. Slice squash on the diagonal, 1/4 inch thick. Sear slices (just brown) on both sides on med-high heat in a heavy saucepan. Set aside. Heat olive oil in a heavy saucepan. Brown chicken breasts on both sides, then remove to a glass baking dish. Set aside. Layer squash slices over chicken in baking dish. Sprinkle herbes de provence evenly over chicken and squash. Pour chicken stock over ingredients. The stock should cover the chicken completely, but not the squash. Squash will steam through as the chicken broils. Cover with glass lid and bake for 20 to 25 minutes at 400 degrees. Serves 4
