Greek Salad
The chopped mint adds an unusual twist to this easy-to-prepare salad that is great for lunch.
Prep and Cook Time: 10 minutes

Ingredients:
  • 4 cups salad greens
  • 2 TBS chopped mint
  • 3 TBS crumbled feta cheese
  • 2 TBS chopped olives
  • 1/2 cup garbanzo beans
  • 1 TBS extra virgin olive oil
  • 1 TBS red wine vinegar
  • sea salt and pepper to taste

Directions:

  1. Combine first five ingredients.
  2. Toss with olive oil and vinegar, and add salt and pepper to taste.
Serves 1

In order to better help you identify recipes that feature a high concentration of nutrients for the calories they contain, we created a Recipe Rating System. This system allows us to highlight the recipes that are especially rich in particular nutrients. The following chart shows the nutrients for which Greek Salad is either an excellent, very good, or good source (below the chart you will find a table that explains these qualifications). If a nutrient is not listed in the chart, it does not necessarily mean that the recipe doesn't contain it. It simply means that the nutrient is not provided in a sufficient amount or concentration to meet our rating criteria.
