Do you know if rinsing sauerkraut (to reduce sodium) causes you to lose any of the fermentation benefits?

Yes, rinsing sauerkraut would wash away some of the healthy bacteria that are produced during fermentation. However, if you are concerned about the salt content, we would recommend rinsing it off and including it as part of your healthy eating menu as it will still remain a nutritious addition to your healthy eating lifestyle even after rinsing.
