Oven baked Rainbow Trout with Ginger and Spring Onions

  1. Wash your Rainbow Trout and lay on a foiled baking tray (ensure you have enough foil to cover over the fish for baking).
  2. * Then drizzle over some olive oil and scatter the fish (inside and outside of the fish) with finely chopped ginger and spring onion.
  3. * Fold over the foil to cover the fish leaving space at the top inside the foil so the fish will steam in its own juices.
  4. * Place in an oven at 180 degrees for 20 minutes - then open the foil and bake for a further 5 minutes.
For the garlic potatoes - simply cut and quarter the potatoes and place them in a baking tray that has already been drizzled with olive oil and heated in the oven (if the tray and oil are hot then the potatoes will not stick to the tray!). Then scatter over 1 or 2 finely chopped cloves of garlic onto the potatoes and bake in the oven for 35 minutes or until golden brown.
