Tomato Bean Veggie Soup

I love to make this soup.


Ingredients:
add 3 cups of water to a large pot
add 1/2 jar of your favorite tomato veggie sauce, whichever one you like
simmer, then add:
up to two chopped onions
two cloves of chopped garlic
simmer for 10 minutes until onions become soft
add red pepper to taste

add 2 cups of pole beans cut into bite size pieces
and simmer for 5 minutes

Directions:
add:
3 carrots, sliced
1 cup of cauliflower florets cut into small pieces
2 cup yellow squash, sliced
1 can of garbanzo or black beans
simmer for 10 more minutes, until all flavors blend and carrots are just tender

pour over a bowl of raw spinach or chopped up kale.
