Q Does baby spinach not contain oxalic acid, or significantly less than adult spinach? Is baby spinach safe to eat raw?

We typically recommend that individuals, particularly those with kidney or gallbladder concerns, boil spinach to reduce the oxalate content of this vegetable. Quick boiling it and discarding the water, reduces the oxalate content, which can be harmful for these individuals. Baby spinach has much lower oxalate levels, so if you choose to eat spinach raw (which is appropriate for most healthy people) then choose this form of spinach.
