Cleaning Shiitake Mushrooms

Wipe but Do Not Wash

Mushrooms are very porous, so if they are exposed to too much water, they will quickly absorb the water and become soggy. Therefore, the best way to clean mushrooms without sacrificing their texture and taste, is to clean them without water. To do this, simply wipe them well with a damp paper towel. You can also use a mushroom brush, which you can purchase at most kitchenware stores.

Cutting Fresh Shiitake Mushrooms

To cut fresh shiitake mushrooms, lay mushrooms upside down and cut off stem, and then slice the cap. Discard stems or save for soup stock. See the Step-by-Step below for more details.

Preparing Dried Shiitake Mushrooms

Rinse dried shiitakes with water. Place in a bowl with just enough hot water to cover; this water can be incorporated into the recipe you are making and can add a lot of flavor to your dish.

Let mushrooms sit in the hot water for about 10 minutes or until they are soft.

Squeeze out excess water, slice mushrooms up to the stem on all sides and discard the stem since it is usually too tough to eat (or use them to make a stock).
