Braised Red Cabbage with Baked Chicken Breast

This is a delicious twist on the normal red cabbage dishes. Served with our flavorful Basil Sauce it gives it a nice lift.

Prep and Cook Time: 30 minutes

Ingredients:
4 boneless, skinless chicken breasts
2 TBS fresh lemon juice
1 tsp dried rosemary
¼ cup water
4 cups red cabbage chopped
½ cup chopped onion
¼ cup coarsely chopped walnuts
salt & pepper to taste

Basil Sauce
4 TBS lemon juice
1 clove pressed garlic
2 TBS chopped fresh parsley
3 TBS chopped fresh basil
½ tsp salt
¼ tsp pepper
3 TBS olive oil

Directions:

  1. Preheat oven to 375. Cut chicken breasts into thirds so they bake in a short amount of time. Rub breast pieces with 1 TBS of lemon juice, rosemary, a little salt and pepper. Place in baking dish, and bake for about 20 minutes, covered, or until done.
  2. In a large sauté pan bring water and 1 TBS lemon juice to a boil. Add cabbage and onion. Cover and cook over low heat, stirring occasionally, about 15 minutes, or until cabbage is tender.
  3. While cabbage is cooking mix together all Basil Sauce ingredients, whisking in olive oil a little at a time at end.
  4. Toss cabbage with basil sauce, walnuts, salt and pepper. Serve with baked chicken breast.
